Recipe
Ingredients:
For dough: * All-purpose flour: ¾ cup, plus extra for dusting * Oil: 1 tsp * Salt: to taste * Water: ¼ cup at room temperature
For stuffing: * Potatoes: 2 large, boiled and mashed * Salt: to taste * Red chili powder: ½ tsp * Oregano: ¼ tsp * Chopped coriander: 1 tsp * Oil: for frying
Instructions:
- In a bowl, mix all the dough ingredients with a fork.
- Let the dough rest for 4-5 minutes.
- Mix well with a wet hand to form a smooth dough. Add water if required.
- In a separate bowl, mix all the stuffing ingredients.
- Make small balls of the dough and roll into elongated discs.
- Cut strips along one half of the disc as shown in the video, leaving the edge intact.
- Put stuffing along the uncut half and roll as shown. Seal the end with a little water.
- Fill all the rolls and keep aside.
- Fry in hot oil over medium heat until golden brown. Do not overcrowd the pan.
- Serve hot with green chutney, ketchup, or your favorite dip.
Cooking tip: Do not stir the rolls immediately after putting them in the oil, as this may cause the springs to open up. Wait a few minutes before turning them.
