Recipe

Ingredients: * Medium-sized Potatoes: 500g (par-boiled and peeled) * Butter: 2 Tbsp * Oil: 1 Tbsp * Chopped garlic: 2 Tbsp * Chili flakes: 1 tsp * Mixed herbs: 1 tsp * Red pepper powder: 1 tsp (less spicy variety) * Black pepper powder: ½ tsp * Salt: to taste * Coriander: 2 Tbsp (finely chopped) * Cheddar/mozzarella/pasteurized: 4 Tbsp (grated - can use a mix or any one)

Instructions:

  1. Cut the potatoes into halves.
  2. In a pan, heat the butter and oil.
  3. Add the garlic. Once pink, add all the spices and the potatoes.
  4. Toss to coat. Stir for a couple of minutes.
  5. Add the coriander. Mix well.
  6. Sprinkle cheese on top, cover with a lid, and let it cook on low heat until the cheese melts.
  7. Serve hot.
