Recipe

Ingredients: - Cooked rice: 1 cup - Curd (yogurt): ½ cup - Salt to taste

For tempering: - Oil: 1 Tbsp - Black mustard seeds: ½ tsp - Urad daal (split black lentils): 1 tsp - Curry leaves: 5-6, chopped - Ginger: ½ tsp, grated - Green chilies: 1-2, finely chopped - Red chili powder: ¼ tsp - Hing (asafoetida): a pinch

Instructions: 1. In a bowl, mix together the rice, curd, and salt. Ensure the rice is cold for the best texture. 2. Set aside the rice mixture. 3. In a pan, heat oil. Add the mustard seeds and daal. 4. Once the daal turns golden, add the curry leaves, ginger, hing, and green chilies. 5. Turn off the flame, add the red chili powder, and pour the tempering over the rice. 6. Serve chilled.

Tips: - If using freshly cooked rice, allow it to cool for a few hours before mixing with the curd. - Adjust the amount of red chili powder according to your spice preference. - For a creamier texture, add a little milk to the curd before mixing with the rice.
