Recipe

Ingredients:

  • 1 cup whole wheat flour
  • ½ cup curd
  • ¼ cup oil
  • ¾ cup sugar (for the cake)
  • ¼ cup sugar (for the caramel)
  • 5-6 pineapple slices (fresh or canned)
  • ½ cup pineapple chunks
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 1 tsp vanilla essence
  • 1 tsp cinnamon powder
  • 2-3 Tbsp milk (only if required)

Instructions:

  1. Preheat the oven on bake mode to 180 degrees Celsius.
  2. In a pan, add the sugar and heat over low flame until it melts and turns to a golden color. Immediately pour this into the baking dish and spread all around. Once cool, arrange the pineapple slices over this to form the base.
  3. In a bowl, add the sugar, oil, vanilla essence, and curd. Mix well.
  4. In another bowl, add the whole wheat flour, salt, baking soda, baking powder, and cinnamon powder and mix together well. Now add the pineapple chunks and coat with flour.
  5. Add the dry mixture to the wet mixture and mix well. Add some milk (if needed) to adjust the consistency.
  6. Now pour the batter over the pineapple base, pat a couple of times, and put in the oven to bake for 30 to 40 minutes.
  7. Do the toothpick test after 30 minutes. Once done, take out and put on a wire tray to cool.
  8. Once cool, take it out in a plate gently, pineapple side up.
  9. Enjoy this delicious, moist cake with coffee/tea!

Architecture Tip

When deciding between a hob and a gas stove, consider that a gas stove offers more flexibility. If you want to change your gas stove, you can just remove the old one and attach a new one. However, if you have a hob, you are restricted to replacing it with a hob of the same size.
