
What makes this dish special
Tandoori Gobi is a universally loved dish that can be prepared in a variety of ways. This recipe is a dry preparation that is both crunchy and flavorful. The cauliflower is cut into large florets to maintain its texture during cooking. The marinade is made with thick curd, roasted besan, and a blend of spices. The addition of mustard oil to the marinade gives the dish a unique zing. The cauliflower is cooked on a medium flame until golden brown on both sides. Finally, the dish is smoked with charcoal to give it a tandoori flavor.
Recipe
Ingredients: * 250-300g cauliflower, cut into florets * ½ cup thick curd * 1 tsp ginger-garlic paste * ¼ tsp turmeric * 1 tsp Kashmiri red chili powder * ½ tsp cumin powder * 1 tsp coriander powder * ½ tsp garam masala * ½ tsp chaat masala * Salt to taste * ½ tsp roasted kasoori methi * 2 Tbsp roasted gram flour/sattu * 1 Tbsp lemon juice * 1 Tbsp oil (preferably mustard) * 2-3 Tbsp ghee/oil * 1-2 pieces charcoal * Chopped coriander for garnish
Instructions:
- In a bowl, mix all the ingredients for the marinade.
- Add the cauliflower florets and mix gently to coat well.
- Keep in the fridge for at least 30 minutes, preferably up to 2 hours.
- In a pan, add the ghee/oil and drop the cauliflower pieces.
- Cook on a low to medium flame, till light golden on both sides. Add more oil if required.
- Once done, take smoldering charcoal in a small bowl.
- Keep it on the pan, add a tsp of ghee, and quickly cover the pan to allow it to smoke. Turn the flame off.
- Serve hot, garnished with chopped coriander and with a side of green chutney.
Tips: * Use thick curd for the marinade. If you don't have thick curd, you can strain regular curd for 30 minutes to remove excess water. * Cut the cauliflower into large florets to maintain its texture during cooking. * Use mustard oil in the marinade for a unique zing. * Cook the cauliflower on a low to medium flame until golden brown on both sides. * If your pan is small or you have a lot of cauliflower, cook it in batches. * Rotate the pan to ensure even cooking.

Especially if you have narrow kitchens, along the toe space, if you give a strip lighting, the narrow kitchens' width is visually more.
