What makes this dish special

This raw mango chutney is a delicious and versatile condiment that is perfect for adding a touch of sweet, sour, and spicy flavor to any meal. It is made with grated raw mangoes, sugar, salt, and a blend of spices, including turmeric, red chili powder, clove powder, cinnamon powder, and cumin powder. The chutney is cooked until it reaches a glazed consistency, and then it is stored in a clean, dry glass bottle. This chutney can be stored for a long time in the refrigerator. It is a great way to use up raw mangoes during the summer season, and it can be enjoyed with a variety of dishes, such as roti, paratha, rice, or even as a dip for snacks.

Recipe

Ingredients: * Raw mango: 3/4 cup tightly packed (grated) * Sugar: 3/4 cup * Salt: to taste * Turmeric powder: 1/8 tsp * Red chili powder: 1tsp (adjust according to taste) * Cloves powder: 1/4 tsp * Cinnamon powder: 1/4 tsp * Cumin powder: 1/2 tsp

Instructions: 1. In a heavy bottomed, wide based pan add the mango, salt and sugar. 2. Cook on medium flame, while stirring. 3. Once sugar has melted, turn flame to minimum and add all the other spices. 4. Keep cooking, while stirring. 5. Once the chutney gets a glazed look and is a little liquid than the final consistency we are looking at, turn the flame off. 6. Transfer the hot chutney into a clean and dry glass bottle, leaving about 1 inch space empty at the top. Do not put the lid. 7. Now wait for it to cool completely, before putting the lid on and storing in the fridge. This will last for a number of months if cooked /stored correctly.
