Trifle Sandwiches

These Trifle Sandwiches are a quick and easy snack that is perfect for any occasion. They are made with three layers of bread, each with a different filling. The first layer is a spicy green chutney, the second is a savory potato mixture, and the third is a sweet tomato ketchup. The sandwich is then coated in a gram flour batter and fried until golden brown. The result is a delicious and satisfying snack that is sure to please everyone. These sandwiches are also very versatile. You can use any type of bread, any type of chutney, and any type of potato mixture. You can also add other fillings, such as cheese, vegetables, or meat.

Recipe

Ingredients:

• 4 slices white bread
• Tomato ketchup
• Green chutney (grind together half cup coriander with 2 cloves of garlic, 2 green chillies, 1 tsp salt and 2-3 tsp lemon juice)
• Boiled potato mix (boil 4 medium potatoes, peel and mash. Add 2 Tbsp chopped onion, 1 tsp chopped coriander, 1 chopped green chili, 1/4th tsp grated ginger, half tsp dry mango powder, half tsp coriander powder, red chill powder to taste and salt to taste. Mix well)
• Gram flour batter (take 1 cup besan, make a smooth paste with water so that there are no lumps. Add 2 tsp chopped coriander, half tsp ajwain, salt and red chilli powder to taste. Mix well.
• Oil for frying
• Finely chopped cabbage for garnishing

Instructions:

1. Take oil in a kadhai/pan for frying. Put it on medium flame to heat.
2. Take one slice of bread and apply ketchup on it. On a 2nd slice spread the potato mixture and place on top of the first slice face up. On a 3rd slice spread green chutney and place over the 2nd, face up. Top it with the 4th slice.
3. Very carefully, lift the whole sandwich and coat it well with the besan batter on all sides. Drop it gently in the oil.
4. Fry on all sides till golden brown. Cut it diagonally into 4 pieces. Plate it, garnish with cabbage and enjoy as an evening snack or in breakfast.
