Recipe

Ingredients: * 1 cup semolina vermicelli (dry roasted until golden) * 1 1/4 cup water * 2 Tbsp oil * Salt to taste * Red chili powder to taste * 1 cup chopped cabbage * 1/2 cup grated carrot * 1 small onion, chopped * 1 small potato, cut into small cubes * 1 small capsicum, chopped finely * 1/4 cup beans, chopped finely * 1/2 cup par-boiled green peas * 2 Tbsp peanuts * 1 tsp split urad dal * 1/2 tsp channa dal * 1 tsp black mustard seeds * 1/4 tsp grated ginger * 7-8 curry leaves, cut coarsely * 2 whole dry red chilies, cut into halves * 2-3 green chilies, chopped * 1 Tbsp lemon juice * Coriander for garnishing, chopped

Instructions:

  1. Roast the vermicelli in a pan until golden.
  2. In a pan, add water to the roasted vermicelli. Bring it to a boil and turn the flame to minimum. Add a pinch of salt and 1 tsp of oil. Let it cook until the water almost evaporates. Stir a bit and keep aside.
  3. In another pan/kadai, add the oil. Add the peanuts. Cook until they start to crackle. Add the daals, mustard seeds, red chilies, green chilies, ginger, and curry leaves. Saute for about a minute.
  4. Add the onion and potatoes. Cook for a couple of minutes, until the potato is done.
  5. Add all the vegetables, except the capsicum. Stir on high flame for a minute. Add the salt and red chili powder.
  6. Now add the boiled vermicelli and toss well. Add the lemon juice and capsicum, and mix well.
  7. Serve hot, garnished with green coriander.

Cooking tips: * If using frozen green peas, thaw them slightly in the microwave before adding them to the dish. * If using fresh green peas, parboil them before adding them to the dish. * Adjust the amount of red chili powder to taste. * Do not overcook the vegetables, as they should retain their color and crunch.

Architecture Tip
