What makes this dish special

This lemon cheesecake is a universally loved dessert that is simple to make at home. The cheesecake has a crunchy base made from digestive biscuits and melted butter. The cheesecake filling is made from cream cheese, fresh cream, yogurt, caster sugar, and lemon juice. Gelatin is added to help the cheesecake set. The cheesecake is garnished with basil leaves. The result is a creamy, tangy, and refreshing dessert that is perfect for any occasion.

Recipe

Ingredients: * Cream cheese: 240g * Caster sugar: 75g * Fresh Cream: 240ml * Yogurt / Thick Curd: 120g * Digestive / Marie biscuits: 120g * Melted butter: 50g * Lemon juice: 15ml * Gelatin: 8g * Water: 40g * Basil leaves: for garnishing * Mould with removable bottom

Instructions: 1. Crush the biscuits, add the butter, mix well and line the bottom of the mould with this mixture. Pat firmly and refrigerate for 30 minutes.  2. Mix the gelatin with water and keep aside.  3. Mix the cream cheese well, till soft, add the sugar, yogurt/curd and lemon juice while mixing well.  4. Now add the fresh cream and fold well. Heat the water-gelatin mixture in the microwave for about 10s to melt. Mix this into the cream cheese mixture. Pour this mix into the mould, over the biscuit mixture. Tap gently and break any bubbles with a toothpick.  5. Set in the fridge for at least 5 to 6 hours.  6. Take out the mould. Put a warm towel on the sides and gently slide down, as shown in the video. Garnish with a sprig of basil leaves.  7. Your cheesecake is ready to be served.
