Recipe
Ingredients:
- 1 cup whole wheat flour
- 3 tsp crushed garlic
- 1 Tbsp oil
- Salt to taste
- 1 tsp sugar
- 2 Tbsp sour curd
- 4-5 Tbsp warm milk
- ½ tsp baking powder
- ¼ tsp baking soda
- 3 Tbsp soft butter
- Chili garlic flakes to taste
- Mixed herbs as required
- 2 Tbsp finely chopped capsicum
- 2 Tbsp sweet corn (optional)
- 2 Tbsp grated processed cheese
- ½ cup grated mozzarella cheese
- 1 Tbsp sesame seeds
- 1 Tbsp finely chopped coriander
Instructions:
- Preheat the oven to 170 degrees Celsius.
- In a bowl, mix together the flour, sugar, salt, baking powder, and baking soda. Add half the garlic, some sesame seeds, mixed herbs, and chili flakes.
- Add the curd, oil, and 3 Tbsp of milk. Bring together with a ladle.
- Roll into a ball, knead for about 45 seconds (add more milk if required), and cover with a damp cloth for at least 20 minutes.
- Mix the butter with the rest of the garlic, mixed herbs, and red chili flakes. Add some coriander leaves.
- Grease a baking plate with the butter mixture.
- Knead the dough for 30 seconds. Apply some flour and roll into a 9-inch circle. Place this on the baking plate.
- Brush the surface with butter mixture, leaving about half an inch empty along the edges.
- On one half, put the cheese, capsicum, salt, coriander, herbs, and chili flakes.
- Fold into half and seal the edges with water. Make a pattern with a fork.
- Brush some butter mixture on top and sprinkle sesame seeds. Make cuts on the top layer, as shown in the video.
- Bake for 15 to 25 minutes, until golden brown.
- Take out from the oven, brush with remaining butter, cut along the lines, and serve hot.
