Dahi Ke Kebab is a popular Indian snack dish, also known as an appetizer. It is a vegetarian dish made primarily from hung curd (thick yogurt), paneer (Indian cheese), and spices. The dish is known for its melt-in-your-mouth texture, which is achieved by using hung curd that has been drained of excess moisture. The addition of cheese and spices enhances the flavor, making it a delightful treat. The kebabs are coated in breadcrumbs and deep-fried until golden brown, providing a crispy exterior that contrasts with the soft interior. The dish is versatile and can be served with various accompaniments like onion salad, green chutney, or tomato ketchup.

Recipe

Ingredients: * Thick Hung Curd: 100g (made by putting 1 cup of thick curd in a cloth over a sieve overnight) * Fresh Paneer: 50g (crumbled or grated) * Processed Cheese: 25g (grated) * Besan: 1 Tbsp (roasted lightly) * Onion: ½ medium (chopped finely) * Green Chillies: 1-2 (chopped finely, adjust to taste) * Coriander: 1 Tbsp (chopped finely) * Salt: to taste * Garam Masala: ½ tsp * Cumin Powder: ½ tsp * Breadcrumbs: for coating * Oil: for frying

Instructions:

  1. In a bowl, mix together the hung curd, paneer, processed cheese, besan, onion, green chillies, coriander, salt, garam masala, and cumin powder. Mix lightly, being careful not to overmix.
  2. Using two spoons, shape the mixture into balls.
  3. Coat each ball in breadcrumbs and flatten into discs.
  4. Deep fry in hot oil until golden brown.
  5. Serve hot with onion salad, green chutney, or tomato ketchup.

Tips:

  • Do not overmix the ingredients to maintain the melt-in-your-mouth texture.
  • The cheese already has salt, so be careful when adding salt to the mixture.
  • The patties can be made ahead of time, coated in breadcrumbs, and stored in the refrigerator for at least 5-6 hours before frying.

Architecture Tip

To control the sun that you want or you do not want, do provide awnings in the house. When it is summer, you can open the awnings. But in winters, when you sit at the same place, you want direct sunlight, so it can be retracted and can be opened as and when required. The same thing happens with the windows in the house or the balconies also.
