Recipe
Ingredients:
- Fresh Methi (Fenugreek Leaves): 100g, finely chopped
- Fresh Paneer: 300g, cut into cubes
- Onion: 1 medium, finely chopped
- Tomatoes: 2 medium, pureed
- Oil: 2 Tbsp + 1 tsp
- Cumin Seeds: 1 tsp
- Bay Leaf: 1
- Cinnamon: 1 inch stick
- Green Cardamom: 2 pods
- Cloves: 4-5
- Ginger Paste: 1 tsp
- Garlic Paste: 1 tsp
- Green Chilies: 3-4, slit
- Salt: to taste
- Kashmiri Red Chili Powder: 1 tsp
- Haldi (Turmeric): ¼ tsp
- Coriander Powder: 1 tsp
- Garam Masala: ¼ tsp
- Sugar: 1 tsp
- Milk: ¾ cup
- Malai (Fresh Cream): ½ cup
- Water: to adjust consistency
Instructions:
- In a pan, add 1 tsp oil and sauté the chopped and washed methi leaves for about 2-3 minutes until dry. Set aside.
- Take oil in a kadai (wok), add all whole spices. Stir for a minute, then add the ginger garlic paste and green chilies. Sauté for half a minute.
- Add the onions and fry until light brown. Add the tomato puree and cook until the water has evaporated and oil leaves the sides.
- Add all the dry spices, mix well, and add the sautéed methi leaves. Toss well.
- Turn the gas to low and gradually add the milk, stirring continuously.
- Add the malai (fresh cream), salt, and sugar. Mix well.
- Once the mixture comes to a boil, gently add the paneer cubes and let it simmer for 2 to 3 minutes.
- Serve hot.
Tips:
- Sauté methi leaves to reduce bitterness.
- Add paneer just before serving to prevent it from breaking.
- Adjust the consistency of the gravy with water as needed.
