This whole wheat orange cake is a healthy and delicious treat that is perfect for any occasion. What makes this cake unique is that it uses pureed oranges, including the skin, instead of orange juice. This gives the cake a slightly bitter-sweet taste, similar to orange marmalade. If you don't like the bitter-sweet taste, you can peel the oranges before pureeing them. The orange variety used in this recipe is the Kinnow variety, but any orange will work. This cake is also very easy to make and can be ready in minutes. It doesn't need any fancy garnishing, but a simple dusting of caster sugar will make it look even more appealing.
Recipe
Ingredients: * 1¼ cup whole wheat flour * 1 tsp baking soda * 1 tsp baking powder * A pinch of salt * ½ cup milk * ¼ cup oil * ½ tsp vanilla essence * 2 small oranges (Kinnow), deseeded and pureed with skin * 1 Tbsp orange zest, grated * ¾ cup sugar * 1 Tbsp caster sugar
Instructions: 1. Preheat the oven to 180 degrees Celsius on bake mode. 2. Grease a suitable baking dish and line with parchment paper. 3. Mix the sugar and orange zest with all wet ingredients. 4. Mix all the dry ingredients well. 5. Add the dry to the wet mixture. 6. Mix well, and put into the baking dish. 7. Bake for 35 to 45 minutes till done. 8. Take out and set to cool on a wire rack. 9. Demould and decorate with caster sugar and orange slices. 10. Enjoy this moist cake with a cup of hot coffee.
Cooking tips: * If you don't have organic oranges, soak the oranges in warm water for 15-20 minutes before pureeing them. * Don't overmix the batter. * If the batter is too thick, add a tablespoon or two of milk.
