Ingredients: * Cabbage: ½ cup (chopped finely) * Carrot: 1 medium (chopped finely) * Capsicum: ½ (chopped finely) * Beans: ¼ cup (chopped finely) * Spring onions: 1 Tbsp (white part) * Garlic: 1 Tbsp (finely chopped) * Ginger: ½ Tbsp (finely chopped) * Green chillies: 3-4 (finely chopped) * Spring onion: 2 Tbsp (green part) * Soy sauce: 2 Tbsp * Vinegar: 1 Tbsp * Chilli sauce: 1.5 Tbsp * Salt: to taste * Sugar: ½ tsp * Black pepper: ½ tsp * Cornflour: 2 Tbsp (mixed with some water) * Water: 2.25 cups * Oil: 1 Tbsp
Instructions: 1. In a pan, add oil. Once hot, add the ginger, garlic, green chillies and white onion. Stir for 45 seconds. 2. Add the carrot and beans. Saute for a minute, add the cabbage and water. 3. Let it boil for about 3 minutes. 4. Add the soy sauce, chilli sauce, vinegar, salt, sugar, pepper and capsicum. 5. Add the cornflour slurry. 6. Boil for 2 to 3 minutes. 7. Add the green spring onions and serve hot.
Cooking tip: * Adjust the quantities of green chillies and chilli sauce to control the spice level. * Use white pepper powder instead of black pepper powder for a different flavor. * The cornflour should be added just before serving to prevent the soup from becoming too thick.
