Recipe

Ingredients: * Bhindi (Okra): 250g * Garlic paste: 1 tsp * Lemon juice: 1 tsp * Salt: to taste * Red chilli powder: to taste * Chaat Masala: 1/4 tsp * Haldi (Turmeric): a pinch * Ajwain (Carom seeds): 1/4 tsp * Cumin powder: 1/4 tsp * Coriander powder: 1/4 tsp * Besan (Gram flour): 3 Tbsp * Cornflour: 1 Tbsp * Oil: for frying

Instructions: 1. Wash and dry the bhindi. Remove the cap and cut into thin long strips. You can remove the seeds. 2. Put in a big sized bowl. 3. Add the garlic paste, lemon juice and all dry spices. Mix well with a spoon for about a minute or two. 4. In the mean time, put the oil to heat. 5. Now add the besan and cornflour to the bhindi. Mix softly with a spoon for a couple of minutes till the bhindi gets coated well. 6. Now fry the bhindi in batches, in hot oil, till crispy golden. 7. Serve hot with paratha or rice. 8. Once cool, can be stored in an air tight container for a couple of days. Do not reheat.

"The kitchen window can be of a large size. It's not necessary that the entire window is openable. You can have two openable panels on the side and that is sufficient for ventilation." Having a large window in the kitchen allows more light into the space and provides a view of the outside while cooking.
