Recipe
Ingredients: * 1 large green capsicum, deseeded and cut into thin rounds * 4 medium to large potatoes, boiled, peeled, and mashed * 1 medium onion, finely chopped * 1/4 inch ginger, grated * 2 tsp coriander, finely chopped * 2-3 green chilies, finely chopped * Salt to taste * 1 tsp red chili powder * 1 tsp dry mango powder * 1 tsp coriander powder * 2 Tbsp oil for shallow frying * Coriander for garnishing, finely chopped
Instructions:
- In a bowl, mix the mashed potatoes with all spices and ingredients. Mix well and set aside.
- Take the capsicum rings and stuff each ring with the potato filling, patting it down with a greased palm.
- Heat a pan and add oil to it. Once hot, add the stuffed capsicum rings one by one.
- Roast the rings until golden brown on both sides.
- Serve hot, garnished with chopped coriander.
Cooking Tip: Grease your palms with oil before stuffing the capsicum rings to prevent the potato mixture from sticking to your hands.
