Recipe
Ingredients: * Whole Wheat flour: 3/4 cup + 1 tbsp * Carrot: 1/2 cup (grated) * Curd: 1/2 cup (beaten) * Vegetable Oil: 1/4 cup * Jaggery: 1/2 cup (ground coarsely) * Baking powder: 1/2 tsp * Baking soda: 1/2 tsp * Salt: 1/2 tsp * Fresh Cream: 1 tbsp * Cinnamon powder: 1 tsp * Vanilla essence: 1/2 tsp * Mixed nuts: 1 cup (almonds, walnuts, cashews) * Milk: if required
Instructions:
- Preheat the oven on bake mode to 160 degrees Celsius.
- Grease a baking dish of appropriate size.
- In a big bowl, mix together jaggery, oil, curd, cream, and vanilla essence.
- In another bowl, mix all dry ingredients. Now add the carrot and half the nuts. Mix well.
- Mix the dry ingredients into the wet bowl. Mix everything well. If required add a spoon or 2 of milk to get the required consistency.
- Pour into the baking dish. Garnish with the remaining nuts.
- Bake for 25 to 35 minutes.
- Take out, once done and put it on a wire rack to cool.
- After 10 to 15 minutes, serve with tea/coffee, for a healthy snack.
