Recipe

Ingredients: * Whole Wheat flour: 3/4 cup + 1 tbsp * Carrot: 1/2 cup (grated) * Curd: 1/2 cup (beaten) * Vegetable Oil: 1/4 cup * Jaggery: 1/2 cup (ground coarsely) * Baking powder: 1/2 tsp * Baking soda: 1/2 tsp * Salt: 1/2 tsp * Fresh Cream: 1 tbsp * Cinnamon powder: 1 tsp * Vanilla essence: 1/2 tsp * Mixed nuts: 1 cup (almonds, walnuts, cashews) * Milk: if required

Instructions:

  1. Preheat the oven on bake mode to 160 degrees Celsius.
  2. Grease a baking dish of appropriate size.
  3. In a big bowl, mix together jaggery, oil, curd, cream, and vanilla essence.
  4. In another bowl, mix all dry ingredients. Now add the carrot and half the nuts. Mix well.
  5. Mix the dry ingredients into the wet bowl. Mix everything well. If required add a spoon or 2 of milk to get the required consistency.
  6. Pour into the baking dish. Garnish with the remaining nuts.
  7. Bake for 25 to 35 minutes.
  8. Take out, once done and put it on a wire rack to cool.
  9. After 10 to 15 minutes, serve with tea/coffee, for a healthy snack.
