Recipe
Ingredients: * Carrot (250g) * Gobi (250g) * Jaggery (½ Cup) * Salt (to taste) * RCP (2 Tbsp) * Mustard Oil (¼ Cup + 1 Tbsp) * Vinegar (¼ Cup + 1 Tbsp) * Garam Masala (1 tsp) * Red Mustard Seeds (1.5 Tbsp) * Onions (2 medium) * Garlic (10-12 cloves) * Ginger (1 inch)
Instructions:
- In a pot, bring 2 liters of water to a boil.
- Add the carrot and cauliflower. Leave for 1 minute.
- Switch off the flame and drain.
- Spread on a cotton cloth and let it dry under the fan for at least 5-6 hours.
- In a saucepan, bring the vinegar to a boil.
- Let it simmer for 2-3 minutes and add the jaggery.
- Boil for 2 to 3 minutes till jaggery melts and it comes to a semi-thick consistency.
- In a kadai, heat the oil.
- Once it smokes, lower the flame and add the ginger-garlic-onion paste.
- Fry till golden brown.
- Now add the salt, garam masala, and red chili powder. Mix well.
- Add the dried vegetables and cook for 2-3 minutes.
- Add the jaggery-vinegar mix and cook for another couple of minutes.
- Add the mustard and mix well.
- Switch off the flame.
- Let the pickle remain in the vessel till cool.
- Once cool, store in a dry airtight container.
Architecture Tip
