Ingredients:
Kadai Masala: * 3 tsp coriander seeds * 1 tsp cumin seeds * 1 tsp black peppercorns * 4-6 whole dry red chilies
Gravy: * 2 Tbsp oil * 1 tsp cumin seeds * 1 large onion, finely chopped * 1 tsp ginger paste * 1 tsp garlic paste * 2 large tomatoes, pureed * Salt to taste * ½ tsp turmeric powder * 2 tsp Kashmiri red chili powder * 1 tsp coriander powder * 2-3 green chilies, slit * 1 Tbsp cream (optional)
Other: * 1-2 tsp ghee or oil * 250g paneer, cut into cubes * 1 capsicum, cut into squares * 1 large tomato, deseeded and cut into squares * 1 medium onion, leaves cut into squares * Salt to taste * 1 tsp red chili powder * 1 tsp kadai masala
Garnishing: * Chopped coriander leaves * 1 tsp ginger juliennes
Instructions:
- Prepare Kadai Masala: In a pan, dry roast all ingredients for kadai masala until aromatic. Let cool, then grind into a coarse powder.
- Prepare Gravy: In a kadai, add oil. Add cumin seeds and ginger-garlic paste. Add chopped onions and sauté until light brown. Add dry spices (salt, turmeric powder, Kashmiri red chili powder, coriander powder), mix well. Add tomato puree. Cook until oil leaves the sides. Add all but 1 tsp of the kadai masala. Add ¼ cup water and simmer for 5-7 minutes. Add cream (optional) and mix well.
- Sauté Paneer and Vegetables: In a separate pan, add ghee or oil. Sauté vegetables and paneer. Add salt, red chili powder, and 1 tsp kadai masala. Sauté for 1 minute.
- Combine: Add the sautéed paneer and vegetables to the prepared gravy. Simmer for 2-3 minutes.
- Garnish and Serve: Garnish with chopped coriander and ginger juliennes. Serve hot with garlic naan or paratha.
