Recipe

Ingredients: * Tomatoes: 4 large (firm and red, cut into quarters) * Garlic: 4-6 cloves * Onion: 1 small (chopped roughly) * Carrot: ½ (cut roughly) * Butter: 1 Tbsp * Oil: 1 tsp * Basil: 7-8 leaves and a couple of sprigs * Cinnamon: 1 small piece * Cloves: 2 * Whole black pepper: 5-6 * Salt: to taste * Sugar: ¼ tsp * Water: ¼ cup

Instructions: 1. In a pan, add the butter and oil and garlic. Sauté until aromatic. 2. Add the cinnamon, cloves, peppercorns, basil, onion, and carrot. Sauté for a couple of minutes, until the onion starts to turn light brown. 3. Add the tomatoes and let them roast lightly at the edges on high heat. 4. Add salt to taste. 5. Add ¼ cup of water and sugar and let it simmer for a couple of minutes. 6. Switch the flame off and let it cool. 7. Blend to a fine paste. 8. In the same pan, add this mixture (you can strain if you like, for a smoother result). 9. Adjust consistency by adding water. 10. Let it come to a boil and serve hot garnished with basil sprigs.
